[grate butter instead of softening] I didn't pre-soften enough butter today for a batch of cookies and finally tried this method. And... it works perfect! I love a day when I can learn something new :) Use a rubber spatula to scrap any bits remaining on inside of grater to save your fingers. This method may even blend better than the "whole" softened stick. [The cookies turned out perfect!]
