Carrot Pulp Muffins (finally something yummy to do with the waste from juicing!!!) My substitutions: replace half of the flour with WW, omit the butter, replace the honey with 1/4 sugar free maple syrup (butter flavor), replace 4 eggs with 1 cup egg substitute, and replace the milk with unsweetened almond milk...and i also used a 10 x 10 baking dish instead of making muffins. AWESOME IDEA so you don't have to feel bad throwing the pulp away!

For every one-cup of fruit pulp you have, add one to two teaspoons of honey or agave syrup, then add water until you have the desired consistency.
