Carrot Pulp Muffins (finally something yummy to do with the waste from juicing!!!) My substitutions: replace half of the flour with WW, omit the butter, replace the honey with 1/4 sugar free maple syrup (butter flavor), replace 4 eggs with 1 cup egg substitute, and replace the milk with unsweetened almond milk...and i also used a 10 x 10 baking dish instead of making muffins. AWESOME IDEA so you don't have to feel bad throwing the pulp away!

For Fruit Leather: Skip store-bought fruit leather and rolls, and use leftover pulp to make your own. For every one-cup of fruit pulp you have, add one to two teaspoons of honey or agave syrup, then add water until you have the desired consistency. Add to veggie pulp (or Veggie Burgers!): When making things like meatloaf, burgers (veggie or meat), and meatballs, vegetable pulp from celery, carrots, or spinach comes in handy. Adding the leftover pulp adds extra fiber and moisture to the dish.
Magic Muffin Mix - I wonder what would happen if I subbed EngerG for the egg whites? - Also, 1 cup Stevia? I think they mean something like Truvia, or the ones which aren't incredibly freaking strong. Regular stevia... I think they'd mean equivalent of 1 Cup, as that stuff is STRONG.
