Potato bites - Mix Grated potatoes, 3 eggs, 1/2 cup shredded cheddar cheese, 1/4 finely chopped onion (optional), 1/4 teaspoon garlic powder, salt and pepper to taste in a bowl and spoon into a muffin tray, bake for about 20 minutes.

This is such a great breakfast idea! Make them the night before and then reheat them to make a quick and easy breakfast.

Breakfast casserole bites- I made these and froze them for weekday mornings. No Dunkin' Donuts for me, thank you! I used silicone muffin cups so I don't have to worry about peeling a paper cup off. These would be yummy with chopped up green/red peppers, too.
