Grilled Bruschetta Chicken - This was amazing. I used the frozen grilled chicken breast which I cooked for 20 min then topped with the tomato mixture and cooked 5 min more then topped with mozzarella cheese and left in oven until melted. Definitely use balsamic vinegar in the tomato mixture!
Chicago Chicken - 1 jalapeno Juice of 1 lemon (3 Tbsp) 1 Tbsp dried oregano 3 Tbsp olive oil 3 cloves of garlic, minced 3 boneless, skinless chicken breast -Combine first 5 ingredients in the food processor. Pulse until combined and jalapeno is finely diced. Pour into a ziplock bag, add chicken. Toss to coat. Let marinate in refrigerator overnight and then grill.
Chicken Bacon Parmesan Pasta: 1/2 pound bacon, cooked and roughly chopped 1/2 tsp crushed red pepper flakes (or less if you don't want the heat) 1 tsp garlic powder 1/2 pound penne pasta 1/2 cup heavy cream 1/4 cup cream cheese 1/4 cup grated parmesan cheese 2 whole eggs 1/4 tsp ground black pepper 2 grilled chicken breast, sliced (I marinated the chicken in Lawry's Garlic & Herb marinade)
