We LOVE these! I could eat them everyday for breakfast! [Oatmeal Cupcakes: 3 mashed bananas (the riper the better!), 1 cup vanilla almond milk, 2 eggs, 1 tbsp baking powder, 3 cups oats, 1 tsp vanilla extract, 3 tbsp mini chocolate chips (or blueberries)]
Overnight Apple Oatmeal ( throw 2 sliced apples, 1/3 cup brown sugar, 1 tsp cinnamon in the bottom of the crock pot. Pour 2 cups of oatmeal and 4 cups of water on top. Do NOT stir. Cook overnight for 8 - 9 hours on low . *** I tossed the apples with a T. of cinammon and the sugar. Added craisins and honey. Served with brown sugar and milk on top. Good and perfect for a cold day like today.
Almond Joy Oatmeal serves 1 1/2 C old fashioned oats 1 C unsweetened, vanilla almond milk (I use Almond Breeze) 2 T shredded coconut, unsweetened 2 T sliced almonds 2 tsp dark chocolate chips Pinch of salt Prepare the oats according to your favorite method, stove top or microwave. Once cooked, stir in the coconut, almonds and salt and top with chocolate chips
