Tilapia Corn Chowder

2 slices 2 ounces bacon


1 1/2 lbs Tilapia, fillets


4 kernels ears 2 cups fresh corn, fresh
1 stalk Celery
2 tbsp Chives, fresh
1 Leek
1 tsp Thyme, fresh
8 oz Yukon gold potatoes

Canned Goods

4 cups Chicken broth, reduced-sodium


2 tsp Lemon juice

Baking & Spices

1/2 tsp Pepper, freshly ground
1/2 tsp Salt

Oils & Vinegars

1 tsp Canola oil

This chowder was very tasty. I didn't have fresh corn so I used the canned stuff like suggested. I also just used 2% milk instead of the whole milk and I didn't have the chiles. Mike loved it, but then again I don't think he has met a chowder that he hasn't loved!

This is one of the best soups I have tried. It is definitely going to be bookmarked in my cook book.
