lew party of 2: Stuffed Peppers. We replaced the sauce with Rotel (mostly drained). It was delicious but a little too juicy. We're going to try adding a little tomato paste as well, next time. Also, you'll be super surprised how diet friendly this is: at less than a 1/4 lb of beef and 1/2 cup of rice per pepper, it's roughly 430 calories per pepper and super filling!
from Lew Party of 2: Stuffed Peppers stuffing recipe probably would have filled 6 peppers, and I really packed them. I did not boil or otherwise cook the bells before stuffing them and putting them in the oven at 350 for 25 minutes, but I prefer them firm. I added a couple of additional spices, ground ginger and cumin to taste, and used ground turkey instead of beef. Nailed it!

Grilled chicken doesn't have to be boring, top it with sauteed spinach with garlic, mozzarella cheese and roasted peppers and you have a quick and easy chicken dish your family will love! This is perfect for any busy weeknight; serve with pasta or a simple salad for a low carb meal. On hot days, no need to turn your oven on, you can do this all on the gas grill, put the chicken back in the bbq with indirect heat until the cheese melts. I used homemade roasted peppers for this but jarred peppers would work perfectly fine. This makes great leftovers for lunch the next day! Grilled Chicken with Spinach and Melted Mozzarella Gina's Weight Watcher Recipes Servings: 6 • S Size: 1 cutlet, spinach, cheese • Old Points: 4 pts • Points+: 4 pts Calories: 153.3 • Fat: 4.2 g • Protein: 24.5 g • Carb: 4.0 g • Fiber: 1.3 g • Sugar: .7 g 24 oz (3 large) chicken breasts sliced in half lengthwise to make 6 cutlets salt and pepper to taste 1 tsp olive oil 3 cloves garlic, crushed 10 oz frozen spinach, drained 3 oz shredded part skim mozzarella 1 roasted red pepper, sliced in strips olive oil spray Preheat oven to 400°. Season chicken with salt and pepper. Lightly spray a grill with oil (I used my George Forman) or grill outside on a gas grill. Cook chicken on the grill until no longer pink, careful not to overcook or you'll have dry chicken. Meanwhile, heat a sauté pan on medium heat. Baked cabbage rolls...substitute ground beef with chicken or turkey and quinoa for rice. *10/4/12 - Made this meal for my husband tonight, and he rated it a 9! I myself thought it was pretty good too. The only thing my husband didn't like was the raisins in the meat, other than that he thought it was great. I will definitely be making this a household meal at the Mintz residence!*

stuffed peppers Stuffed Green Peppers with Brown Rice, Italian Sausage, and Parmesan (Makes 4 large stuffed green peppers, recipe created by Kalyn when her market had a great sale on peppers!) 1 C long-grain brown rice (I used Uncle Ben's Brown Rice, but any long-grain rice will work.) 4 large green bell peppers, bottom trimmed, cap end cut off and diced, and seeds removed 1 large onion, diced 2 tsp. + 1 tsp. olive oil 2 links turkey Sweet Italian Sausage (or other sausage of your choice. Use diced mushrooms instead of sausage for vegetarian version.) 1/2 tsp. ground fennel 1/2 tsp. dried Greek or Turkish oregano 1/2 cup grated Parmesan cheese salt and fresh ground black pepper to taste 1/4 cup grated mozzarella cheese Cook rice according to package directions, or using a rice cooker. (Rice can be cooked ahead and used in this recipe later.) Preheat oven to 375F/190C. Trim bottom of bell peppers so they have a flat surface to stand on. Cut off a fairly generous amount of the stem end of peppers, then remove seeds. Place hollowed-out peppers in a baking dish that you've sprayed with non-stick spray or olive oil. (A dish that's close in size to the peppers will work best.) Remove stem part from the pepper caps and trim off any white membrane, then dice pepper caps and the onion into fairly small dice. Heat 2 tsp. olive oil in a large skillet, then saute diced pepper and onion for 3-4 minutes, until they are starting to soften but aren't browned. Remove pepper-onion mixture to a bowl, add 1 tsp. more olive oil, then squeeze sausage out of the casing and cook until it's lightly browned, breaking apart with the back of the turner. Put the onion-pepper mixture back into the pan with the sausage, add the dried spices, and saute 2-3 minutes to blend the flavors. Then add cooked rice and Parmesan cheese, season the mixture with salt and fresh ground black pepper to taste, and cook just long enough to warm, about 1-2 minutes. Stuff the filling mixture into the hollowed-out peppers, using a spoon to press the mixture down so it's tightly packed into the pepper shell. (A few years ago I stopped pre-cooking the peppers before stuffing, and now I prefer peppers that are stuffed raw.) If you have any extra filling, you can put it in a small ramekin and bake along with the peppers. Bake peppers for 30 minutes, then remove from oven and put a generous pinch of grated mozzarella on top of each pepper. Put peppers back into the oven and bake about 10-15 minutes more, until cheese is melted and lightly browned. Serve hot. You can freeze leftover peppers for a month or two, although the frozen peppers will be a little softer in texture (but still very tasty.) I cut them in half top-to-bottom before freezing and freeze two halves in a small baking dish with a snap-on lid.
