      Quinoa stuffed peppers: 1 medium onion, finely chopped (1 cup); 2 Tbs. olive oil; 2 ribs celery, finely chopped (½ cup); 1 Tbs. ground cumin; 2 cloves garlic, minced (2 tsp.); 1 10-oz. pkg. frozen chopped spinach, thawed and squeezed dry; 2 15-oz. cans diced tomatoes, drained, liquid reserved; 1 15-oz. can black beans, rinsed and drained; ¾ cup quinoa; 3 large carrots, grated (1½ cups); 1½ cups grated cheese, divided; 4 large red bell peppers, halved lengthwise, ribs removed.

    Slice the zucchini in half. Slice off the bottom to keep in stable. Brush with olive oil and top with garlic or garlic powder. Top with sliced tomatoes, pepperoni(optional), salt and pepper to taste. Use mozzarella cheese, Parmesan cheese or mixed blend.. Bake 375 for 20 to 30 minutes until soft

    Stuffed Peppers. My version: brown ground turkey, add chopped onion and bell pepper. Season with garlic salt, pepper, chile powder, salt (and whatever else I feel like adding). Add 1 large can of tomato sauce (or 2 small cans) and mix with brown or white rice. Stuff the peppers and bake for approx. 30 min. I sprinkle a little cheese on top and let it melt after I turn off the oven.
