MaMa's Supper Club Tilapia Parmesan--I baked them for 12 minutes, , I turned on the broiler and let them finish cooking that way, I would say another 7 min. til browned.

You probably guessed this already but the best part of all this is that the Parmesan gets a little crispy-crunch to it because it broils so beautifully. Pair that with the delicately flaky white fish and the fresh tang of the tomatoes, and then the thick and smooth basil sauciness of the pesto… ohhhyeah. I have a thing for texture. And cheese.

Made this tonight- and we loved it! I served it with rice and fresh steamed broccoli. There was PLENTY of sauce and it was pretty rich so you could easily use some lower fat versions of some ingredients and still have amazing flavor. I think this would work well for any light white fish. A new favorite for sure! Oh and I used a creole seasoning for the cajun seasoning and it was just right.

Sometimes I like to try complicated recipes, but, folks, this butcher gets busy and when I do I want my dinner quick and easy. That’s why I keep a couple 5 ingredient recipes handy, like this cheesy pesto tilapia. Throw a fillet or two over some angel hair pasta and KAPOW! dinner is served. -- Kevin the Meatbay Butcher

MaMa's Supper Club Tilapia Parmesan ~ Don't use as much of the "cheese mixture" next time. I made what it called for and spread all of it evenly over the 7 pieces of tilapia. That was too heavy for such a light fish. The flavoring was great though, a light taste, but a heavy coating, if that makes sense. And cook a lot longer than it says, or try broiling next time.

Parmesan Pesto Tilapia - Pinch of Yum. I made this with fresh tomato and fresh Parmesan. It was very good and extremely fast.
