Sweet and Salty Roasted Chickpea Recipe : 1 can (14 oz) chickpeas (garbanzo beans), drained 2 teaspoons olive oil 1 teaspoon cinnamon or your spice(s) of choice 1 1/2 teaspoons brown sugar 1/4 teaspoon salt Place chickpeas on a baking sheet lined with parchment paper or a Silpat. Bake at 450 F for 30 minutes. (You didn't miss anything here.  You don't oil or season them until after they are done.  In fact, for an extra healthy treat, try them when they get out of the oven before even adding the oil.  They are enjoyable all on their own.) Transfer chickpeas to a bowl and mix thoroughly with the rest of the ingredients. Enjoy hot, or bring to room temperature and store in an air-tight container.  Like popped corn, the chickpeas are never as good the next day.  However, they are still quite enjoyable 3-4 days after making them.

Baked Spiced Chickpeas Recipe Ingredients 2 cans (14 oz each) Chickpeas, 1 1/2 tbsp olive oil 3 tsp spice mix (recipe below) Spice Mix.... 2 tsp sugar 1 1/2 tsp ground cumin 1 1/2 tsp sweet paprika 1 tsp cayenne pepper 1/2 tsp garlic powder 1/2 tsp ground allspice (optional) 1/2 tsp salt Directions Preheat the oven to 425 degrees. Drain and wash the chickpeas. Place the clean chickpeas on a layer of paper towels and gently rub the tops of them with another paper towels. Some of the skins will peel away. *You can trash them, or bake them for an extra crispy little treat. You want to get the chickpeas as dry as possible. While the chickpeas are air drying further, make the spice mix. Pour all of the spices into a bowl and mix well. *This recipe will not use all of the mix, so reserve the excess for later. Place the clean and dry chickpeas in a bowl and toss them with the olive oil. Once coated with oil, sprinkle on the spice mix to taste. Place the seasoned chickpeas on a lined cookie sheet. Heat for 40-60 minutes. Mix them around about half way through. Carefully watch the chickpeas at the end as they can quickly burn. Once done, the chickpeas will be browned and crunchy. As the chickpeas cool they will become even crunchier.

Easy Parmesan Knots by LAURA on DEC, 01, 2009 in BREADS, RECIPES, TRIED AND TRUE RECIPES This recipe will got great with the Mama Mia’s Minestrone from yesterday or any other great Italian meal.  It is a recipe that I adapted from one I found in an issue of Simple and Delicious.  These are easy to make because they start off with a can of refrigerated biscuit dough.  However, they look fancy because you shape the dough in a knot.  Pretty, yummy and easy.  What more could you want?  You could do the same thing with your favorite roll recipe too.  Just shape the same, bake according to your roll recipe and brush with the oil mixture. Easy Parmesan Knots 1 tube (12 ounces) refrigerated buttermilk biscuits ( I used Pillsbury Golden Layers Refrigerated Buttermilk Biscuits) 1/4 cup canola oil 3 tablespoons grated Parmesan cheese (I did use the green can stuff) 1/2 teaspoon garlic powder 1 teaspoon dried oregano 1 teaspoon dried parsley flakes Roll each biscuit into a 12-in. rope and tie into a knot; tuck ends under. Place 2 in. apart on a greased baking sheet. Bake at 400° for 8-10 minutes or until golden brown. In a large bowl, combine the remaining ingredients; brush the warm knots with the mixture. Yield:10 knots.
