One bag of Klondike potatoes - 1lb. Cook for 30 minutes at 500 deg on a cookie sheet covered in foil and with 3/4 cup of water.  Place on the bottom rack.  Let them rest for 10 minutes and then pour 3 tbl spoons of olive oil over potatoes (roll to coat).  Smash each potato with a coffee cup to just under 1/2 inches thick.  Salt pepper and about a tea spoon of thyme.  Back in the oven ( same temp ) on the top rack for 15 minutes to "dry" out.  Move to lower rack and cook for another 20 to 30…
