Easy Garlic Roasted Zucchini: 2 zucchini, rosemary, garlic cloves, parmesan cheese. Preheat oven to 375F. Cut zucchini into large coins and then quarter. Place the zucchini & garlic in lg ziplock, drizzle in enough olive oil to coat, sprinkle in some salt and pepper, a bit of crushed rosemary and squish to coat. Pour onto a cookie sheet and bake 20-25 min, or until zucchini is soft and starts to turn golden in a few places. Spoon into serving bowl & garnish with parmesan cheese.
