Enchilada Lasagna I tried this about 2 years ago and it immediately became a favorite. I sub sour cream for cottage cheese and it is delicious. And so easy. Tonight I even had to make my own enchilada sauce, as I thought I had a can, and you know the rest! I searched Pinterest and found a gluten free sauce, and just used regular flour. It turned out great!
