Baked Sweet Potato Fries - one serving is only 81 calories! cut up sweet potatoes, toss the wedges with a little bit of olive oil, salt, and pepper, and bake at 400 degrees for about 20 minutes. (One serving is half a large sweet potato)
Boil potatoes for about 20 min until fork tender. Drain. Coat a rimmed cookie sheet well with olive oil. Place potatoes on cookie sheet and press with the bottom of a glass. Drizzle with more oil and salt and pepper to taste. Bake at 425 for 20- 30 minutes until slightly golden.
