    Macadamia Nut Chicken - one of our favs. The sho yu cream sauce is to die for and crazy simple! When I can't find papayas, I substitute the papaya marmalade with a mixture of peach or apricot preserves (1/2 c. or so) with 1 small can crushed pineapple. Let the 2 simmer together for about 15 min. Throw it into a blender for a few seconds, then transfer into a small bowl and pop it into the refrigerator to cool. My hubby's favorite meal, hands-down.

Chicken Lazone easy! Instead of chili powder, I put some lemon pepper in a bag with some white wine and minced garlic (along with the other spices called for) and marinated the chicken tenderloins in it for 1/2 hr. and served this dish with grated Parmesan cheese on top. It was exceptionally good. :o)
