Quindim (Brazilian coconut egg pudding): 1c sugar, 1c shredded coconut, 1tbsp soft butter, 5 egg yolks, 1 egg white | Preheat to 350. Mix sugar/coconut/butter, beat in yolks/white. Pour into 9" pie plate, place pie plate in large roasting pan. Add boiling water to roasting pan until halfway up pie plate. Bake ~30min, cool completely, turn onto serving dish, refrigerate until serving.
