Loaded roasted potatoes. Preheat oven to 450. Slice potatoes about 1/4 inch thick and place in bottom of a casserole dish. Make sure potatoes are in one layer. Season potatoes with salt, pepper and drizzle olive oil over them. Bake at 450 for 20 minutes. Sprinkle desired amount of cheese and bacon bits over cooked potatoes. Turn heat down to 350 to melt cheese for about 10 minutes. Garnish with green onions/chives and sour cream/ranch.
Easy Fresh Bruschetta. Slice small loaf of monterey sour dough bread. Brush both sides with olive oil and grill broil both sides until golden brown. Top with sliced fresh heirloom tomatoes, chopped fresh basil and parmigiano reggiano cheese. Lightly drizzle balsamic vinegar and olive oil all over. Enjoy!!
