Honey Lime Chick Enchiladas - to spicy for me and took way to long. I used a rotisserie chicken, red sauce (for the green sauce), used 1/2 c evaporated milk (for the cream), and greek yogurt (for the inside cheese).

Honey Lime Chicken Enchiladas: 1/2 onion (thinly sliced), 1 whole rotisserie chicken (shredded, about 2 cups), 1/3 cup honey 1/4 cup lime juice, 1 (10 oz) can green enchilada sauce, 1 (4.5 oz) can diced green chilis, 1 tablespoon chili powder, 1 (16 oz) can refried beans, 1/2 cup water, 2 cups Monterey jack cheese (shredded) and 8-10 flour tortillas or 12-15 corn tortillas.
