I've made these for years so going to go ahead and put the recipe here. I use stove top stuffing and flatten mine a little to make them crispier. We've never served with dipping sauce either. Fantastic and the kids liked them when they were little. Savory Spinach Bites - This recipe calls for the use of packaged stuffing which will, of course, up the carb count. However, you could substitute your own "stuffing" using purchased low carb bread (or make your own low carb) and the desired seasonings.
Chicken Florentine Artichoke Bake - used wheat rotini, put the onion in raw, used part skim mozzarella instead of jack, used roasted red peppers instead of sun dried tomatoes, put a thin layer of marinara on top of the mixture (under the breadcrumbs) .... SO GOOD! Next time will try cutting back on the cheese.
