Unbelievable. Excellent for summer. These were light and fluffy. I made them a little less lemony, only zesting 1 lemon, and only squeezing 1/2 of a lemon. I made this for a dinner party, and the 4 of us ate it right out of the pan, and polished off the entire thing!! This may be my go-to dessert. (Lemon Blueberry Cheesecake Bars)
