How to roast: Preheat oven to 400F Take a very large, oversized butternut squash, cut it in half, remove the seeds Rub some coconut oil on the inside flesh of both halves of the squash, and sprinkle with salt Place flesh side down on a large baking sheet lined with parchment paper. Roast until skin can be easily pierced with a fork, at least 1 hour.
