Easy Crispy Baked Eggplant. I used a mixture of garlic powder, nutritional yeast, and Italian seasonings instead of chile powder. I didn't want them to be spicy. Could have used a bit more salt and maybe a little longer in the oven to brown more. These turned out to be pretty addicting and tasty and they were easy to make!
