I generally follow the recipe with these modifications: add 1 tsp fresh nutmeg, 1 tsp crushed red pepper, 1/2 cup of chopped tomatoes and a few splashes of white wine when cooking vegetables; add 1/4 cup of Parmesan cheese, 1/4 cup of cream cheese, and 1/2 cup of cheddar cheese to sauce; top casserole with shredded cheddar cheese and Frenchs french fried onions
