Roast Chicken Stuffed Under the Skin~T~ This recipe is delicious and great for a dinner party. The stuffing is made from garlic, shallots, mushrooms, chestnuts, pine nuts. truffle if you have it, Cognac, panko, fresh herbs and butter. Once you prepare the stuffing you put it in a piping bag and pipe it under the skin. Serve with a pan jus made from pan drippings.
