Butternut Squash Pizza: Broil 2 round slices of butternut squash 1/2" thick peeled or unpeeled for 10 min. Turn over. Top with 1/4 cup tomato or pizza sauce or tomato paste with herb,, 1 oz fancy shredded cheese ( mexican cheese blend or mozzarella), & sprinkle of parsley. Broil 2-3 min til cheese melts. gm
Butternut squash, garlic, quinoa, cranberries, kale, pepitas with an orange dressing. Pretty good- made it as a main dish, would make as a side dish next time.
The sweet and nutty flavor of the roasted butternut is so well suited for the flavors of the five-spice. Chinese Five-Spice is a combination of cinnamon, anise, fennel, clove and Szechwan peppercorns. Some combinations include ginger and licorice root in place of the peppercorns. Either variation will work great with this.
