“Beefed-Up” Israeli Salad

Vegetarian • Gluten free • 15 mins to make • Serves 4

Produce

1 tbsp Mint, small packed leaves
3 P ersian cucumbers
1 Red bell pepper, large
3 tbsp Red onion or finely chopped chives
2 Tomatoes on the vine

Condiments

2 tbsp Lemon juice

Baking & Spices

1 Black pepper, Freshly ground
1/4 tsp Kosher salt

Oils & Vinegars

1 tbsp Olive oil, extra-virgin

1/2 cup Feta
