“Beefed-Up” Israeli Salad

Vegetarian • Gluten free • 15 mins to make • Serves 4


1 tbsp Mint, small packed leaves
3 P ersian cucumbers
1 Red bell pepper, large
3 tbsp Red onion or finely chopped chives
2 Tomatoes on the vine


2 tbsp Lemon juice

Baking & Spices

1 Black pepper, Freshly ground
1/4 tsp Kosher salt

Oils & Vinegars

1 tbsp Olive oil, extra-virgin


1/2 cup Feta

Asian Cucumber Salad: 2 medium Cucumbers sliced 1/4 thin; 1 T Honey; 3 T Rice Vinegar; 2 T Soy Sauce; 1 T Sesame Oil; 1 T of Toasted Sesame Seeds; Chili Flakes.

1 In a large bowl, combine the spinach, palm hearts, corn and pomegranate seeds. 2 No more than an hour before serving, in a medium bowl, whisk together the olive oil, vinegar or lemon, pomegranate juice, salt and pepper. 3 Cover, refrigerate, and toss with the salad right before serving. Make Ahead:  Assemble all of the ingredients (except for the dressing) up to 24 hours before your party. No more than a couple of hours before, whisk together the dressing.
