Produce

1 cut into 8-inch pieces 1 c. carrots
1 cut into 4-inch cubes 1 c. green bell peppers
1 cut into 4-inch pieces 2 c. eggplant
1 2 c. peeled potatoes, cut into 1/8-inch cubes
1 4 c. yellow onions, cut into 1/8-inch pieces
1/4 tsp Asafetida, powder
1 1/4 cup California raisins
3/4 cup Split peas, yellow

Condiments

1 tbsp Tamarind paste

Baking & Spices

1 tsp Mustard seed, black
1 1/2 tsp Salt

Oils & Vinegars

6 tbsp Clarified butter or vegetable oil

Liquids

4 cup Water
1/2 cup Water, hot

4 To 6 fresh kari leaves
2 tbsp Sambhar powder

1 Heat canola oil in a Dutch oven over medium-high heat. Add onions and cook 6 minutes or until they are richly browned, stirring frequently. 2 Add potatoes and cook 2 minutes. Add remaining ingredients, except cilantro, and bring to a boil over high heat. Reduce heat, cover, and simmer 25-30 minutes or until potatoes are very tender.
