Very easy banana bread recipe. don't have to be too precise on the measurements. i used my frozen overripe banana chunks and coconut oil instead of butter. and since i had no baking pans, i made banana pancakes. they came out perfectly and required no butter or syrup. next time i have powdered sugar, i'll make a little glaze and drizzle over for dessert.
