Healthy Peanut Butter Cookies

1/4 cup Peanuts, dry roasted unsalted

1 Egg, large

Condiments

1/2 cup Peanut butter, creamy

Baking & Spices

1/2 tsp Baking soda
1/3 cup Brown sugar, light
1/3 cup Granulated sugar
1/4 tsp Kosher salt
1 tsp Vanilla extract, pure
3/4 cup Whole wheat pastry flour

Oils & Vinegars

3 tbsp Canola oil

Nuts & Seeds

2 tbsp Flax seed, ground

    PB Cookies 1/2 c pb, 3 T canola oil, 1/3 c sugar, 1/3 c b sugar, 1 tsp vanilla, 1 large egg, room temp, 3/4 c wh wheat pastry flour + 2 T, 2 T ground flax, 1/2 tsp b soda, 1/4 tsp s, 1/4 c peanuts 375°F. beat oil&pb on med.Beat in sugars.Beat vanil&egg. In other bowl, whisk rest. Add dry to wet, beat til just combined. Stir in peanuts. Scoop dough by rounded T lightly pack prn so cookies hold. Drop 1" apart. Press w/ fork. Bake x 8 min or until lightly golden/tops slight dry (look underdone)
