Creamy Greek Yogurt Mac Cheese - Made this today. Used 12 oz of macaroni, doubled the sauce recipe and added 8 oz broccoli & 2 chicken breasts in addition to the spinach. Garlic Scallion NoodlesIf you LOVE traditional garlic noodles, go ahead and substitute some egg noodles instead. It will taste yummy. Otherwise, try these on to see if you can expand your own belly. These would be great with the Asian Salmon, Ginger Soy Chicken, Korean Spicy Chili Paste Chicken, Korean BBQ Flank Steak. Garlic Scallion Noodles 8 oz (half a box) of angel hair or spaghettini noodles (I like Barilla's whole grain pasta) 4 tablespoons butter (half a stick) 5 cloves of garlic, minced or pushed through a garlic press 2 scallions finely chopped 2 tablespoons soy sauce 1 or 2 tablespoons of brown sugar (based on your own personal preference of sweetness) Cook pasta according to package directions. Drain and rinse. In a heavy skillet over medium heat. Melt butter. Add scallions and garlic. Stir and cook, without browning the garlic. Cook until the garlic smell is fragrant and filling the room, about 5 minutes. Add sugar and soy sauce, and cook for another minute. Increase the heat a bit and throw in the noodles. Quickly saute the noodles until they are all coated with the garlicky butter mixture. Serve immediately. Garnish with additional scallions if desired.

About Mom’s Baked Chicken & Spinach Pasta February 23rd, 2010 | Filed under: entree, recipe | Tags: casserole, cheese, garlic, pasta, spinach For the past couple of months, Tom and I have been training for the A1A (Beach-front avenue!) Half Marathon and Sunday was the Big Day. For me, training was both exhilarating – you feel so accomplished when you’ve run a 10K before breakfast – and painful – patellar tendinitis isn’t particularly fun. Training made me hungry, made me hobble around like an old lady, made me stop drinking beer and wine on Saturday nights (the worst part by far) and made me actually stop wearing heels. On the Big Day, we woke up at 3:30AM and had some homemade power bars and bananas and were on our way. The weather was great – 60 degrees – and we started our run heading east toward the most beautiful sunrise over the ocean. I didn’t have my best run, but Tom ran with me (almost) the whole way and my official time was 2:05:15. We crossed the finish line with our families cheering us on and then celebrated with a nice, big breakfast of French Toast, Eggs, Bacon and Bloody Marys. All in all, a wonderful, completely exhausting day. So, what does all that have to do with Baked Chicken & Spinach Pasta? Well, it was all part of our pre-race meal. This dish is one of those things my mom made all the time when I was growing up and my brother and I loved like crazy. It’s a super simple recipe: sauteed chicken with lots of garlic, olive oil, spinach and white wine all tossed with pasta, covered with cheese and baked. Delicious. So, I made a batch and my mother-in-law made Tom’s favorite spaghetti and meat sauce and we all carbo-loaded on Saturday night before the Big Day. Perfect pre-marathon food, but good pretty much all the time. And now, I’ll happily return to beer and wine on Saturday nights, heels at work and a lot less pasta recipes on the site. Print This! Mom’s Baked Chicken & Spinach Pasta 1 lb. pasta (I used whole wheat shells) 4 boneless, skinless chicken breasts (about 2 lbs.), diced 1/4 cup olive oil 8 cloves garlic, minced 1 tsp. salt 5 cups fresh spinach, chopped 1/4 cup white wine 2 cups mozzarella cheese Preheat the oven to 350°. Set a large pot of water to boil. Once it comes to a rolling boil, salt it and cook the pasta until just al dente. Drain. While the pasta is cooking, set a large skillet over medium heat. Once it’s hot, heat the olive oil then add the chicken. Brown the chicken on all sides – about 10 minutes. Add the garlic and simmer with the chicken until it’s fragrant and begins to turn golden – about 3 minutes. Add the salt. spinach and white wine to the skillet and cook for an additional 3 – 5 minutes, or until the spinach begins to wilt. Toss the contents of the skillet with the pasta and place in a casserole dish. Cover with cheese and bake for 25 minutes. Makes about 8 servings.

Cheesey Mac and Cheese ======================== Perfect Mac-n-Cheese (serves 4 as a side dish) 8 ounces penne pasta (half a box) 2 cups Beecher’s Flagship Cheese Sauce (see below) 1 ounce Cheddar, grated 1 ounce Gruyere cheese, grated 1/4 to 1/2 teaspoon chipotle chile powder Preheat oven to 350 degrees. Oil or butter an 8-inch dish. Cook the penne 2 minutes less than the package directions. You want the noodles not quite done because they will finish cooking in the sauce in the oven. Rinse the pasta with cold water and set aside. Combine cooked pasta and Flagship Sauce in a medium bowl and mix carefully but thoroughly. Scrape the pasta into a prepared baking dish. Sprinkle the top with the cheeses, then the chile powder. Bake uncovered for 20 to 30 minutes, until the top has a nice golden crust. Let sit for a few minutes before serving. If you decide to make this as a main and double the amounts, use a 9×13 inch baking pan and increase the time to 30 to 35 minutes. Beecher’s Flagship Cheese Sauce (makes 4 cups) 1/4 cup butter 1/3 cup all-purpose flour 3 cups milk 14 ounces semi-hard cheese, grated (I used Beecher’s Flagship Cheddar) 2 ounces grated semi-soft cheese (I used Gorgonzola) 1/2 teaspoon kosher salt 1/4 to 1/2 teaspoon chile powder 1/8 teaspoon garlic powder Melt the butter in a heavy-bottomed saucepan over medium heat. Whisk in the flour. Continue to whisk and cook for 2 minutes. You just made a roux, a substance used for thickening sauces! Slowly add the milk, whisking constantly. Cook until the sauce thickens, about 10 minutes, stirring frequently. Now you turned the roux into a bechamel. Remove from the heat. Add the cheese, salt, chile powder and garlic powder. Stir until the cheese is melted and all the ingredients are incorporated, about 3 minutes. If the cheese isn’t melting completely you can put the pan on low heat. Use immediately or refrigerate for up to three days!
