      Mini corndog muffins. Just used this recipe as an idea. I used a buttermilk pancake recipe from my Purity cookbook, subbing 1/2 the flour for cornmeal. I heated the pans with butter before adding the batter and weiners and cooked at 425.

      Mini Corn Dogs (I did not use this recipe) -I used 1 box of Jiffy Corn Bread Mix (which made 18 muffins) and 3 1/2 Turkey Dogs. Fill muffin tin with corn bread mix, slice the dog, place each slice into the middle of the corn mix. I would turn them on the side too instead of putting the hot dog in straight. Also less cornbread to hotdog

      Mini Corn Dogs (I did not use this recipe) -you can use 1 box of Jiffy Corn Bread Mix (which made 18 muffins) and 3 1/2 Turkey Dogs. Fill muffin tin with corn bread mix, slice the dog, place each slice into the middle of the corn mix. If There is a little too much corn bread to hot dog so next time fill each muffin with less mix which should stretch the batter to fill all 24 muffins and end up using all 5 turkey dogs!!!

      Mini Corn DogsKids love mini corn dogs, but many parents dread serving up the deep-fried treats. The snack is made a little bit healthier when baked, and kids still enjoy them just as much as the fried versions. Using any batter recipe, fill the muffin tin cups about half full, stuff a mini hot dog in the center, and bake until golden brown. Serve with a variety of dipping sauces, including some spicier sauces for the adults.

      Mini Corn Dog Muffins Makes 48 mini muffins Corn bread recipe adapted from Ingredients: 1/2 cup melted butter (or 1/4 cup butter + 1/4 cup unsweetened applesauce) 1/2 cup sugar 2 eggs 1 cup buttermilk 1/2 teaspoon baking soda 1 cup cornmeal 1 cup all purpose flour 1/2 teaspoon salt 8-10 all-beef hot dogs, cut into 1″ bites Directions: 1. Preheat oven to 375 degrees. Combine butter and sugar in a bowl, and whisk to combine. Add eggs and whisk to incorporate. Add buttermilk and whisk to incorporate. 2. In a separate bowl, combine baking soda, cornmeal, flour, and salt, and stir to combine. Whisk into wet ingredients in two batches. 3. Spray a mini muffin tin with non-stick spray, and spoon 1 Tablespoon of batter into each mini muffin cup. Place one hot dog bite into the middle of each cup. 4. Bake for 8-12 minutes (oven temperatures vary), or until cornbread is golden brown. Cool in mini muffin tin for 5 minutes before serving. Store leftovers in the refrigerator, and re-heat for 20-30 seconds before serving.
