Baked Butternut Squash Chips - 2 butternut squash, Parmesan cheese, Olive oil, Kosher salt. oven 375. Bowl large pot salted water. Peel and cut squash 1/8 inch slices. Boil for 2 minutes, drain & rinse til cool, pat dry. Baking sheet, parchment paper, single layer no touching. Brush oil, sprinkle salt & parm. Bake til crispy, 15-20 min watch carefully. Can store airtight up to 1 Week. Or can microwave - 10 min high per batch.
