Cheesy Quinoa & Broccoli Patties 1/2 cup quinoa 1 cup water 5 large broccoli florets 1 small onion, diced 1/4 cup breadcrumbs 1/4 cup shredded cheese 1 large egg Salt and Pepper for seasoning Olive oil for cooking 1. cook quinoa & let it cool completely. Saute diced onion & broccoli, cool, then dice. Mix all ingredients, leaving the egg until the end. Mix well for a smooth, wet mixture. Heat oil, make your patties. Cook each patty for about 7 - 8 minutes on each side medium heat.

Form into golfball sized meatballs. Bake at 350 degrees for 30 minutes.
