    Made this as a late night snack with frozen corn,stove top , and grated Parmesan cheese ((didn't have cotija on hand)) and mayo and it was delicious !!!

Mexican Street Corn - a friend told me about buying this from vendor carts in Cali and I didn't believe her. She did say it was amazing.

Mexican Street Corn- 4 lg ears corn-butter-sea/kosher salt-fresh ground pepper,to taste-1/2c mayonnaise-1 +1/2c Queso Fresco,crumble or Cotija or Parmesan cheese,grated-4 tsp chile powder-4 tbsp fresh cilantro, mince, optional-1 lime,cut in wedges Preheat oven 400 F. Brush corn lightly w butter-sprinkle w SP- Roast 20-25 minutes.Could grill or boil.Brush each ear w mayonnaise, sprinkle w cheese,chile powder,cilantro, if using, press into corn(helps it stick)Sprinkle w SP.Serve w lime wedges.
