    2 minute pumpkin pie for one. And only 75 calories! 1/2 cup Pumpkin Puree, 1/4 cup Egg Whites, Sweetener, Cinnamon or Pumpkin Pie Spice. Mix together all the ingredients. If you prefer a flan-like texture, add more pumpkin; if you prefer a cake-like texture, add more egg whites. Microwave for two minutes. Use a mix of Greek yogurt, hazelnut cream cheese, and pumpkin pie spice for the icing.

    I always seem to have extra pumpkin after opening a can for a recipe...this Two-Minute Pumpkin Pie recipe could be the solution to those remainders...1/2 C pumpkin, 1/4 C egg whites, sweetener, cinnamon...mix and microwave...top with hazelnut cream cheese. Yum.

Healthy Pumpkin Pie Oatmeal – Simply Taralynn

Caramel Pumpkin Pie Dip | 8 oz cream cheese, softened 2 cups powdered sugar 1 1/4 cups canned pumpkin 1/2 cup sour cream 1 1/2 tsp cinnamon 1/2 tsp nutmeg 1/2 tsp ginger 1/4 tsp cloves (optional) 1/4 - 1/2 cup caramel sauce, store bought or homemade (optional, but highly recommended) graham crackers, chocolate crackers or gingersnap cookies.
