    Apple Sandwiches w Granola & peanut butter! Yummy! Ingredients; 2 small apples, cored and cut crosswise into 1/2-inch thick rounds 1 teaspoon lemon juice (optional) 3 tablespoons peanut or almond butter 2 tablespoons semisweet chocolate chips 3 tablespoons granola. Can substitute CINNAMON instead of chic chips for an apple pie flavoring! If you won't be eating these tasty treats right away, start by brushing the apples slices with lemon juice to keep them from turning brown. Spread one side of half of the apple slices with peanut or almond butter then sprinkle with chocolate chips and granola. Top with remaining apple slices, pressing down gently to make the sandwiches. Transfer to napkins or plates and serve.

Chicken+Peanut Butter Lettuce Wraps iceberg or romaine lettuce leaves Filling: ½ to ¾ c. chopped Fuji apple (about 1 apple); 1 c. cooked chicken (I boiled mine with salt, pepper,+onion); 20 red grapes, halved; ½ c. chopped red onion; ¼ tsp. salt Sauce: 1 Tbsp. light mayo; 1 Tbsp. honey; 1 Tbsp. all-natural creamy peanut butter Mix all filling +then pour sauce+mix. Spoon into fresh, crispy lettuce leaf+roll it up. Makes four lettuce wraps.

These would have been better without the PB. Just Nutella next time.

1/2 cup almond butter 1/3 cup maple syrup 1/4 cup butter 1 teaspn cinmon 1/2 teaspn salt 1 1/2 cup old fash oats 2 tabspn grnd flax 1/2 cup chop almonds In a med saucepan, over low heat combine almond butt, maple syrup, butter, salt and cinn, stirring frequently. Once fully melted take off heat and add in oats, flax and almonds.Spread mixture in dish lined with parchment paper or foil. Place in fridge to cool and set.Cut and store in an air tight container.
