Sancocho- OK here is a recipe for a typical 'comfort' food in Puerto Rico Sancocho. It is a wonderful thick stew here they are using beef but I have more often had it with chicken and oft times it has ad rice in it as well. A more traditional one will have calabaza (pumpkin) in place of butternut squash

Sandwiches de Mezcla de Puerto Rico 1 can or jar one whole red pimento 1 can Spam 12 oz 1 block velveeta cheese use 1/2 only 1/2 cup milk Cube cheese and ham and add to blender. Add pimento and liquid Add milk slowly until spreadable consistency You may add more or less milk depending on how thick you may want it. Spread it on 2 slices of sandwich bread and enjoy!!
