Mexican Shrimp Cocktail: 1-2 lb shelled and cooked shrimp (50-60 count), 2 large chopped tomatoes, 1/2 small white onion (chopped) or 2 green onions (chopped), 1/2 cup cilantro slightly chopped, 1/2 jalapeno (diced with seeds), 1 avocado (chopped), tomato juice (V8), lime juice, salt and pepper. Mix all in glass bowl and chill

Rachel Ray talked about how you should make your own taco seasoning because the stuff you buy in stores is full of sodium(and it has silica in it, which is like the little packet found in new shoes that says DO NOT EAT!). This is just full of flavor. Simply spices! 1 T chili powder, 1 T ground cumin, 1 T garlic powder, 1 T onion powder, 1/4 T crushed red pepper (review by Julie: super easy and cheap!)
