Lemon Cookies...I modified this to be gluten free (Bob's all-purpose + xantham gum) and egg free (Ener-G egg replacer) and I used evaporated cane juice instead of refined sugar. Turned out great!
Crisp Lemon Cookies Recipe. I made these at Christmas and they were a huge hit. Making them a gain this weekend. The only change I made is I added extra vanilla and lemon peel, and I didn't smash them down as much as the recipe says. Instead of getting crisps I ended up with amazingly moist, lemony cookies. An instant fav.
Swiss Cinnamon Crisps ~ Deceptively simple, these cookies are packed with the flavor of the cinnamon, lemon zest and brown sugar! Ingredients needed: 1 c (2 sticks) butter or margarine, 1/2 c brown sugar, 3/4 c sugar, 1 egg, 1 t vanilla, zest of 1 lemon (about 1 T), 3 d flour, 1 t kosher salt, 1 T cinnamon. Mixture for top of crust - 1 egg, 2 T milk, 1/4 c sugar, 1 T cinnamon.
