Main Ingredient : Penne 1lb penne or ziti – ½ pint container grape tomatoes – ½ cup sun dried tomatoes – ½ lb celingini (small mozzarella balls) – 1 large handful of baby arugula – ½ cup sliced garlic – 2 tbsp of olive oil – ¼ cup of extra virgin olive oil – salt and pepper to taste
Caprese Pasta Salad 1 pound bow tie pasta, cooked according to package 1 cup cherry tomatoes, cut into fourths 1 cup fresh mozzarella, cubed 0.25 cup olive oil 2 Tablespoons balsamic vinegar 0.125 teaspoon salt 0.125 teaspoon pepper 2 teaspoons garlic, minced 12 fresh basil leaves, chopped 0.25 teaspoon dried oregano Directions: Combine all ingredients in a large bowl and serve.
