I would LOVE to try this! I think the spaghetti squash is low-carb and a lot healthier than pasta! Roasted spaghetti squash with fresh herbs. from martha stewart.

1 (3 lb.) spaghetti squash  4 tbsp extra virgin olive oil  1 tbsp plus 1 tsp apple cider vinegar  1/4 tsp kosher salt  2 medium Gala apples, cut into 1/2-inch cubes  1/2 cup pecans, roughly chopped and toasted  3 green onions (white & green parts), thinly sliced  nuke15 min. whisk and add dressing, stir in rest of ingred.

Baby Spinach Salad with Honey Roasted Butternut Squash, Pumpkin Seeds, Gorgonzola and Dried Cherries! Wondering if it would work as well if I subsitute Gorgonzola (what is that!) with feta cheese and dried cherries with fresh ones!

Spag Squash w/ Spinach, Feta & Beans  14 oz. cannellini bean  1 T basil, chop  1/2 tsp dried oregano  3 T olive oil  1 T white wine vinegar  1 (3#) spag squash  6 c thin strips spinach  leaves  1/2 c onion chop  2 garlic cloves, mince  1/2 c feta  Parm  Combine beans, herbs, 1 T oil, and vinegar. Pierce & Nuke squash 15 min, high, turnx1. let stand 10 min.  Saute onion and garlic in 2T oil. Cook, stirringx1 minute.wilt spin-2 min.. Add bean mixture.heat 1-2 min.  S  add to squash w/ parm
