30 min Mexican Chicken Lime Soup-I made this recipe...I added about 2tsp of cumin, 1/2tsp of tumeric and 1tsp of cayenne pepper. I didn't add any salt or pepper and I used 4 chipotle peppers instead of just 2. ABSOLUTELY DELICIOUS!!! And so easy!! Will definitely be making again. :) -AE
Chicken Cordon Bleu Roll-Ups - Used 6 chicken breasts cut in half fillet style (12 pieces total) and then tenderized to flatten. Doubled the breading and seasoned with additional salt and pepper, otherwise followed the recipe exactly. Only problem, encountered was that there were still dry spots on the tops of the breading, so just gave a good spray of Pam and put back in the oven to finish.
homemade beef and broccoli: This was a great recipe. It actually tasted like take-out, which almost never happens with homemade Chinese like this. Gwen ate every bite we gave her. Definitely going on the list of easy weeknight recipes.
