I make this quite frequently with a few adjustments and it's delicious! Adjustments: Fresh ground pepper to taste, 1 to 2 carrots, substitute 1 garlic clove for shallot (I have also never used the suggested toppings). You can also add more or less rice and lentils as well as water depending on how thick you want the soup... It's a GREAT soup and So easy... Enjoy!

I didn't have the red peppers so I made it without them, this will definitely be hitting the regular rotation...most of the ingredients can be found in my pantry anyway, so stock up on some of the staples of this recipe and keep it in your back pocket when "there's nothing to make" But whatever you do, you have to try this soup!!!
