    Delicious barbecue chicken nachos!

    Cauliflower Stuffed Portobello * 4 portobello mushroom caps * 2 tbsp EVOO, extra virgin olive oil * 1 tbp oregano * Salt and pepper 1. Preheat oven to 425 degrees. 2. Brush the mushroom caps with EVOO on both sides 3. Sprinkle with oregano and salt and pepper. 4. Roast in oven for 15 minutes. Turn over and roast for an additional 15 minutes. 5. While mushrooms are roasting the final 15 minutes, prepare the mashed cauliflower. Recipe here. 6. Remove mushrooms from oven, fill the underside of each mushroom cap with the mashed cauliflower.
