Coconut Almond Granola (low sugar) - *3 cups rolled oats (GF) *1/2 cup unsweetened coconut flake *1/2 cup crushed raw almonds *1/4 cup dried cranberries [or other dried fruit] *2-3 Tbsp. sugar *pinch of salt *1/2 tsp. ground cinnamon *2 Tbsp. oil *5-6 Tbsp. honey *1 tsp. vanilla extract Mix all except cranberries. Bake@350 for 30 min, after about 15min stir and add dried cranberries Homemade Coconut, 1 2 Cups, Coconut Almonds, 1 4 Cups, Coconut Flakes, Almonds 1 4, Dry Cranberries, Raw Almonds, Almonds Granola
Paleo Almond Joys...delicious and super easy! #paleo #paleodesserts Recipe: 1cup Shredded Coconut, 2 tbsp Honey, 2 tbsp melted Coconut Oil, 1 tsp vanilla, pinch of sea salt. Mix ingredients in bowl & scoop into cupcake sheet (spread among 6). Press down to make more dense. Then, combine 3 tbsp cocoa, 3 tbsp honey, 3 tbsp melted coconut oil. Pour evenly over coconut mixture. Crush some almonds and sprinkle on top. Freeze for 15 minutes.

winter granola: 3 1/2 cups oats 1 cup shredded coconut 3/4 cup pecans – coarsely chopped 1/4 cup packed brown sugar or sucanat 1/4 cup butter 1/4 cup honey 1 tsp ground cinnamon 1 1/2 tsp vanilla extract 3/4 Craisins (optional) 3/4 cup white chocolate chips
PB Cookie Granola 2 1/2 cups Rolled oats 2 tbs Butter (I used Smart Balance™) 1 cup Sugar substitute of choice (or 2-4 tbs stevia or to taste) 1/8 cup Honey 1/4 cup Mini chocolate chips 1/4 cup and 2 tbs cup egg whites (or egg white substitute) 1/2 cup Peanut butter 1 tsp Baking powder Pinch Salt (to taste) Optional Add 1 scoop of protein powder for a protein packed version!
