Vegan Mac n’ Cheese - I don't eat much pasta, like almost none. Not because I don't like it, I love it, but I try to stay away from the temptation. :-) Every once in awhile I will eat rice or quinoa pasta and I have been curious to make a "cheese" sauce from cashews since I first saw it in a raw food restaurant. I will have to try this.
