      Artichoke Crusted Chicken Recipe: made on 9/16/12. This was wonderful, moist, delicious. We made it two ways.. the first was according to the directions (pound, cook in skillet, then broil w/the mixture over it), and another way.. We just baked it at 400 for 25 minutes on top of an uncooked chicken breast. The second method was far easier and FAR BETTER. Moister, more infused flavors throughout the meat.

      Artichoke Crusted Chicken Recipe 2 chicken breasts, pounded thin 2 tbsp olive oil 1/4 cup mayonnaise 1/4 cup artichoke hearts, drained chopped (I used canned) 1/3 cup grated white cheddar cheese salt and pepper the chicken sauté each chicken breast in 1 tbsp olive oil medium-high heat, for 8-10 minutes, flipping once, or until the juices run clear. Mix together the mayonnaise, artichoke hearts and cheese. Spread the mixture over chicken and then broil at 400 degrees for 3 minutes.
