Black Bean Avocado!! Definitely a big win! Tweaks were: dried cilantro, bottled lime juice, yellow tomato, 1/2 as much vinegar because I'm always afraid of vinegar overpowering a dish, and I used a mixed greens salad. Served with blue corn chips. So very good!
I LOVE this recipe for Vegan Bean Burgers. The only thing I did different was that I added some other veggies (carrots, corn, green/red peppers, onions) to the food processor and then mixed them up with the beans. I would, however, leave out the cinnamon this time, as I found it to be way too strong. Then again, I'm not really a huge fan of cinnamon.
Vegan Quinoa Recipe: 1 tsp vegetable oil, 1 onion choped, 1 1/2 tsp minced garlic, 3/4 c uncooked quinoa, 1 tsp cumin, 1 1/2 c vegetable broth, 1/4 tsp cayenne pepper, 1 tbsp lime juice, 1 c frozen corn, 2 15 oz cans of drained black beans, 1/2 c cilantro, 1 ripe avocado diced, salt & pepper to taste
Started with a quick soak (boil beans for one minute and rest for an hour, then drain water) and moved it to the Crock Pot. After 7 hours on Low beans were not broken up yet and was too watery. Next time I'll use only 6 cups of water and cook on high, per Cook's Illustrated black bean slow cooker recipe. However, great flavor and pretty simple.
