Caprese Pasta Salad Ingredients: 2 cups Orzo pasta 20-30 grape tomatoes cut in half 3/4 cup fresh mozzarella chopped 5-6 fresh basil leaves chopped 1/2 cup red onion chopped 1 clove garlic diced 1/2 cup olive oil 3/4 cup balsamic vinegar Salt to taste Cook pasta according to package instructions. Drain and toss in olive oil. Set aside to cool. Mix in all other ingredients when pasta is cool. Serve chilled. Enjoy!
