Marinate tomatoes in balsamic vinegar for 30 minutes. Lay on a baking sheet, season with salt and pepper. Bake for 7 minutes at 350 degrees. Then top with sautéed spinach and mozzarella. Broil until cheese melts.

Stuffed tomatoes with mushrooms, parmesan and spinach recipe. This was a hit with the one person in my family who loves tomatoes. Everyone else kind of just scooped the cheese out of the center and asked what else there was to eat. Not terribly filling
